EVO Oil
The olive tree has been at work on Lake Garda since the Middle Ages and was used with excellent results in both food and medicine. During the Renaissance, however, man’s work helped to define the characteristic features of the agricultural landscape of this area through the construction of the “terraces”.
The production area in which we are located is the northernmost point where olive cultivation is possible thanks to Lake Garda, which creates a Mediterranean microclimate: this climatic situation makes it almost always immune to olive parasites, which need much warmer temperatures for their reproduction.
always immune to olive parasites, which need much warmer temperatures for their reproduction. In the past, in our area, the olive tree surrounded the cultivation of the vine, from which it ‘stole’ precious space; even today you can still find centuries-old plants on the banks, at the edge of the vineyards. In the last few years Francesca and I have been trying to recover olive growing: we are firmly believed that this age-old form of cultivation is necessary to maintain the biodiversity of our territory and the entire Garda area and we have therefore planted more than 150 new olive trees of the Leccino, Casaliva and Frantoio varieties in addition to the 400 already present on the farm. the biodiversity of our territory and the entire Garda area and we have therefore planted more than 150 new olive trees of the Leccino, Casaliva and Frantoio varieties in addition to the 400 already present on the farm.
We produce a delicate, fruity and light oil with a savoury, persistent and satisfying taste that lends itself to many uses in the kitchen.
The culture of quality that we hold dear has led us to extend our project beyond cultivation, harvesting, pressing and bottling: making culture meansknowing and preserving the environment, handing down a production system that guarantees the final consumer a conscious consumption.
We were therefore the protagonists as creators, along with other companies, of the birth of the Movimento Turismo Olio della Lombardia: an association through which we will promote the history of extra virgin olive oil by involving people in the various stages of production, from flowering to harvesting, from pressing to tasting.
